Chef Graeme Charles is a top-rated Telluride chef. From the age of 14, he always knew that he wanted to work in the kitchen. He started working at a local cafe, peeling potatoes and chopping onions. After working these basement jobs, the cooks saw his talent, and he was quickly moved into the main kitchen. For the next ten years, Graeme Charles worked in kitchens around Denver, always becoming a part of the main kitchen.
In 1999, he relocated to Rhode Island, where he attended Johnson and Wales University. There, he studied Business Management and graduated Magna Cum Laude. After this, he moved to Miami and studied International Fine Wines. Eventually, he earned a level two sommelier certification.
From there, he made his permanent residence in Telluride, and that’s when he became the Head Chef at the Peaks Resort and Spa. After years there, Chef Graeme Charles became a private chef in Telluride, and works with Telluride Sleighs providing unique dinner sleighs and private catering to those living in and visiting Telluride. His kitchen sits at 9500 feet, and though it’s hard to breathe and even harder to souffle at this altitude, he enjoys handcrafting the delicious meals he’s known for.
